INGREDIENTS

  • 0.5 lb / 200g rigatoni or penne pasta, plus splash of pasta water

  • 4 large vine tomatoes

  • 1/2 large brown onion, finely chopped

  • 2 garlic cloves, minced

  • 3 tbsp extra virgin olive oil

  • handful of fresh basil leaves, plus extra for topping

  • 4 tbsp pecorino romano or parmigiano reggiano, grated

  • salt, pepper, pinch of sugar, to taste

DIRECTIONS

  • Cut vine tomatoes in half, put them in a large bowl and cover with boiling water. Leave for 5 minutes.
  • In the meantime, bring a large pot of salted water to boil. Cook pasta until al dente.
