  • 3/4 cup (180ml) milk (dairy or non-dairy)

  • 1/2 cup (110g) cream cheese

  • 1 tbsp Greek yogurt

  • 1/2 cup (120g) pumpkin puree

  • 3 tbsp maple syrup or honey

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon pumpkin pie spice (or a mixture of cinnamon, nutmeg, and cloves)

  • Pinch of salt

  • Optional toppings: pumpkin seeds, greek yogurt, maple syrup

DIRECTIONS

  • In a bowl or jar, combine all the ingredients: oats, Greek yogurt, pumpkin puree, milk, cream cheese, maple syrup or honey, vanilla extract, pumpkin pie spice, and a pinch of salt. Stir until all the ingredients are well incorporated.
  • Cover the bowl or jar with a lid or plastic wrap. Place it in the refrigerator and allow it to chill overnight or for at least 4-6 hours. This resting period will soften the oats as they absorb the liquid.
