These 10-minute Creamy Peanut Butter Noodles are absolutely life-changing! I make them whenever I’m in a rush or just craving something easy-to-make and delicious.
WHAT ARE 10-MINUTE CREAMY PEANUT BUTTER NOODLES
10-Minute Creamy Peanut Butter Noodles is an (almost) no-cook recipe that combines soft udon noodles with a creamy sauce made from peanut butter, soy sauce, lime juice, honey, garlic, and ginger. It’s a very easy Asian-inspired noodle dish perfect for busy days when you don’t feel like cooking.
INGREDIENTS YOU’LL NEED
- Udon stir-fry noodles: Choose fresh udon noodles for their chewy texture that works really well with a creamy sauce.
- Peanut butter: Choose a high-quality smooth peanut butter with no added sugar or salt for the best results.
- Soy sauce: Use a good quality soy sauce or tamari sauce.
- Sesame oil: Toasted sesame oil adds a rich, nutty aroma to the sauce.
- Honey or maple syrup
- Lime juice or rice vinegar
- Garlic and ginger: Use fresh garlic and ginger for the best results.
- Sriracha sauce or chilli flakes: These are optional if you like a hint of heat.
- Garnishes: I like to go for chopped green onions, peanuts, and black sesame seeds.
HOW TO MAKE CREAMY PEANUT BUTTER NOODLES
Please note: This is just an overview – the full ingredients and directions are in the recipe card at the bottom of this post.
Step 1: Cook the noodles. Bring a pot of water to a boil. Cook the udon stir-fry noodles for 1-2 minutes until al dente. Drain, reserving about ½ cup of cooking water, and set aside.
Step 2: Prepare the sauce. In a medium bowl, whisk together the smooth peanut butter, soy sauce, sesame oil, honey (or maple syrup), lime juice (or rice vinegar), minced garlic, grated ginger, and sriracha sauce or chilli flakes (if using).
Step 3: Toss with noodles. Add the hot cooked noodles to the bowl with the sauce. Add a splash of reserved cooking water and toss until the noodles are evenly coated with the creamy sauce. Add more reserved cooking water if needed to achieve the desired consistency.
Step 4: Garnish and serve. Divide the creamy peanut butter noodles among serving bowls. Garnish with chopped green onions, peanuts, and black sesame seeds. Serve immediately and enjoy!
STORING AND FREEZING
This 10-minute dinner is best enjoyed fresh, but you can store any leftovers in an airtight container in the refrigerator for up to 2 days. When ready to eat, simply reheat the noodles in the microwave or on the stovetop until warmed through, adding a splash of water if needed.
As for freezing, udon noodles tend to become mushy when frozen and reheated, so I don’t recommend freezing this dish.
TOP TIPS
- Use fresh udon noodles: Udon noodles have a texture that works really well with this creamy peanut butter sauce.
- Adjust the sauce consistency: If the sauce is too thick or not creamy enough, add more reserved cooking water a little at a time.
- Customize to taste: Feel free to adjust the amount of honey, lime juice, or sriracha sauce according to your personal preferences.
- Garnish generously: Don’t skip garnishes! Chopped green onions, peanuts, and black sesame seeds really take this noodles recipe to the next level.
