FOOD SCIENCE NOTES

Why the apples get soft and saucy?
Apples are around 85% water. When they’re heated, their pectin (the natural “glue” that keeps fruit firm) begins to break down, which softens the flesh. The small amount of sugar and lemon juice in the filling helps draw out moisture wand create a light syrup that coats the apples as they cook.

Why the topping gets crisp in the air fryer?
The combination of oats + flour + cold butter is key. As the butter melts, it releases steam and coats the dry ingredients, creating those irresistible crunchy clumps. The air fryer intensifies this effect because its circulating hot air promotes rapid browning and crisping much faster than a regular oven.

Rolled oats vs. quick oats
Rolled oats keep more texture and give a heartier, chewier crisp topping. Quick oats absorb liquid faster and create a softer, more uniform crumble. Both work, the texture just changes slightly depending on the variety you use.

Cornstarch is often used in crisps – so why not here?
Because chopped apples release just enough natural juices to create their own sauce without making the crisp watery. The small batch size also means you don’t need additional thickening, especially since the air fryer evaporates excess moisture quickly.

INGREDIENTS YOU’LL NEED

  • Apples: I like using firm, slightly tart apples such as Granny Smith, Braeburn or Honeycrisp. They hold their shape well and don’t turn mushy in the air fryer. Any apple you’d bake with will work here.
  • Brown sugar: Just a tablespoon is enough to gently sweeten the filling and help the apples caramelize. Coconut sugar works beautifully too if you prefer a deeper flavor.
  • Cinnamon: The classic warm spice that makes the whole kitchen smell cozy. You can add a pinch of nutmeg or allspice if you love extra fall flavors.
  • Lemon juice: Adds brightness and keeps the apples from turning brown. Even a tiny squeeze makes a difference.
  • Rolled oats: These give the topping its signature crisp, chewy texture. If you only have quick oats, they work too, the topping will just be slightly softer.
  • All-purpose flour: Helps the crumble come together and creates those golden clumps we all love.
  • Butter: Cold, diced butter is essential for a proper crisp topping. As it melts, it creates tiny pockets of steam that make the topping crunchy and golden.
  • Nuts (optional): Chopped pecans or walnuts add a lovely bit of crunch and make the topping even more irresistible. Totally optional, but I highly recommend it.

HOW TO MAKE APPLE CRISP IN AIR FRYER

Please note: This is just an overview – the full ingredients and directions are in the recipe card at the bottom of this post.

Step 1: Prep the apples

Add your chopped apples to a bowl and toss them with brown sugar, cinnamon and lemon juice. Give everything a good stir so the apples are evenly coated and start to release a little juice.

Step 2: Make the crisp topping

In a separate bowl, combine the oats, flour, brown sugar and a pinch of salt. Add the cold, diced butter and rub it in with your fingertips until the mixture forms coarse, crumbly clumps. Stir in the nuts if you’re using them.

Step 3: Assemble

Divide the apple mixture between 2–3 small oven-safe ramekins (or one small air fryer-safe baking dish). Sprinkle the oat topping evenly over the apples – no need to press it down; it crisps better when it’s loose.

Step 4: Air fry

Preheat your air fryer to 170°C / 340°F. Place the ramekins in the basket in a single layer and air fry for 20-25 minutes, or until the topping is golden and the apple filling is bubbling around the edges.

Step 5: Serve

Let the crisp cool for about 5 minutes before serving (the filling will be very hot). Enjoy air fryer apple crisp warm with a scoop of vanilla ice cream or a spoonful of Greek yogurt.

STORING AND REHEATING

Fridge:
Store any leftovers in an airtight container in the fridge for up to 3 days. The topping will soften a bit, but the flavors get even deeper and cozier.

Reheat:
Pop air fryer apple crisp back in the air fryer at 160°C / 320°F for 3–5 minutes to bring the crisp topping back to life. You can also microwave it, but the topping won’t be quite as crunchy.

Freeze:
You can freeze the baked apple crisp for up to 2 months. Let it cool completely, wrap tightly, and freeze in single portions. Thaw in the fridge overnight and reheat in the air fryer until warm and crisp on top.

Make ahead:
Prep the apple filling and the topping separately, store both in the fridge, and assemble just before cooking.

NOTES FROM MY KITCHEN

I’ve always had a soft spot for warm fruit desserts, and this air fryer apple crisp has become my little last-minute treat on evenings when I want something cozy without making a whole production out of it. What I love most is that it feels like a proper homemade dessert but truly takes minutes to put together.

A small tip I’ve learned: chopping the apples into small, even pieces helps them soften faster and cook more evenly in the air fryer. If your apples are cut too large, they can stay a bit firm in the center, so don’t be afraid to go smaller here.

Cold butter is also your friend. The colder it is when you rub it into the oat mixture, the crispier the topping becomes. Sometimes I even pop the topping in the fridge for 5 minutes while I prep the apples. It gives you those extra crunchy golden clusters that make apple crisp irresistible.

And if you want to make this feel extra special, try adding a tiny pinch of nutmeg or cardamom to the apples. It’s such a small thing, but it gives the whole dessert that warm, cozy bakery smell that fills the kitchen instantly.

FAQ

Can I use quick oats instead of rolled oats?
Yes! Quick oats work perfectly. They’ll give you a slightly softer, more uniform topping, while rolled oats give a chewier, heartier texture. Both turn out delicious in the air fryer.

What are the best apples for apple crisp?
Any firm baking apple works well – Granny Smith, Braeburn, Honeycrisp, or Pink Lady. Softer apples (like Gala) will still taste great but break down faster.

Can I make this without butter?
Absolutely. Coconut oil works as a dairy-free alternative. The topping will be a bit softer, but still golden and crisp.

Can I double the recipe?
Yes, but make sure your air fryer basket can fit large baking dish.

Why is my apple crisp topping not crispy?
This usually happens when the butter wasn’t cold or the topping was pressed down too firmly. Leave it loose and crumbly on top. The air fryer needs space to crisp it up.

Can I bake this in the oven instead?
Definitely! Bake at 180°C / 350°F for 25–30 minutes until the topping is golden and the apples are bubbling.
