WHAT IS GREEK YOGURT HERB DIP?
This Greek yogurt herb dip is a simple, no-cook dip made from thick Greek yogurt, fresh herbs, olive oil, and lemon juice. I make it specifically to serve alongside my crispy garlic parmesan potatoes. The cool creaminess against the hot, garlicky crust is a combination I keep coming back to. But honestly, once you have a bowl of this in the fridge, you’ll find yourself putting it on everything.
Use a mix of dill, chives, and parsley if you can. Each one brings something slightly different. Dill is bright and grassy, chives are mild and oniony, parsley is fresh and clean. Together they make the dip feel a little more interesting than any one herb alone.
HOW TO MAKE IT

Step 1: Mix
Combine Greek yogurt, olive oil, finely chopped fresh herbs, lemon juice, salt, and pepper in a small bowl. Stir until smooth and well combined.
Step 2: Chill
Cover and refrigerate until ready to serve. Even 15 minutes in the fridge helps the flavors come together.

STORING
This Greek yogurt herb dip keeps well in the fridge for up to 3 days in an airtight container. Give it a quick stir before serving. It may separate slightly as it sits, which is completely normal. Not suitable for freezing.
