HOW TO MAKE BURRATA BRUSCHETTA

  • For burrata bruschetta:
  • 2 slices large ciabatta bread

  • 1 garlic clove (to rub ciabatta after toasting)

  • 2 tablespoons (30 ml) olive oil

  • 1 lb (450 g) cherry tomatoes

  • Salt and black pepper, to taste

  • 2 burrata cheese balls (14 oz or 400 g)

  • Fresh basil leaves, for garnish

  • For basil dressing:
  • 1 cup fresh basil leaves

  • 1/4 cup (60 ml) extra-virgin olive oil

  • 1 tablespoons (15 ml) white wine vinegar

  • 1 tablespoon (15 ml) honey

  • ½ lemon, juiced

  • 1 garlic clove

  • Salt and black pepper, to taste

DIRECTIONS

  • Preheat your oven to 400°F (200°C).
  • Place the cherry tomatoes on a baking sheet and drizzle them with 1 tablespoon of olive oil. Sprinkle with salt and black pepper. Toss gently to coat.
  • Roast the cherry tomatoes in the preheated oven for about 15-20 minutes, or until they become slightly blistered and softened. Set aside.
  • While the tomatoes are roasting, brush the ciabatta bread slices with the remaining olive oil on both sides. Toast the bread in a pan or in the oven for a couple of minutes until crispy and golden brown. Rub with garlic clove. Set aside.
  • Place basil, garlic, lemon juice, vinegar, olive oil, and honey in the food processor. Blend until well combined and smooth. Season to taste with salt and pepper.
  • Place the toasted ciabatta bread slices on a large serving plate. Cut the burrata cheese ball into smaller pieces and distribute them evenly over the bread.
  • Top the burrata with the roasted cherry tomatoes, and drizzle the basil dressing over the entire dish.
