INGREDIENTS

  • 8 oz (225g) halloumi cheese, cut into cubes

  • 2 tablespoons olive oil

  • 3 oz (100g) fresh spinach leaves

  • 8 oz (220g) cherry tomatoes, halved

  • 1 cucumber, diced

  • 1 small red onion, thinly sliced

  • 2 oz (50g) walnuts or pecans, roughly chopped

  • Ciabatta or baguette slices, toasted, for serving

  • For the Dressing:
  • 3 tablespoons olive oil

  • 1 tablespoon red wine vinegar or lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • Salt and pepper to taste

DIRECTIONS

  • Preheat a pan or skillet over medium-high heat with olive oil. Once hot, add halloumi cubes to the pan. Cook for about 2-3 minutes on each side or until cheese becomes slightly crispy and golden brown. Remove from the pan and set aside.
