I’ve been making this one for years and I genuinely never get tired of it… pumpkin soup in October just feels right. The smell of everything roasting in the oven, the color of it in the bowl and the way it warms you up from the inside. It’s that soup.

Why roasting vegetables makes soup taste so much better
When you roast pumpkin, tomato, onion and garlic at high heat, two important things happen that boiling can’t replicate as easily.
First, water evaporates from the vegetables, concentrating their flavours and allowing the surface to become drier. Roasting also creates new flavours through heat-driven reactions that don’t happen during gentle cooking in water.
As the vegetable surfaces get hot and dry, Maillard browning produces new flavour compounds and those golden, slightly charred edges develop deep, savoury, roasted flavours.
Boiling keeps the vegetables surrounded by water, which limits the surface temperature to around 100°C (212°F) and greatly reduces browning. Same ingredients, but completely different flavor.
HOW TO MAKE IT

1. Roast the vegetables
Cut the pumpkin into smaller pieces and remove the seeds. Quarter the onion and halve the tomato. Slice the top off the garlic head to expose the cloves. Arrange the pumpkin, tomato, onion, garlic and chili on a large baking sheet. Drizzle with olive oil, season with salt and black pepper and toss until evenly coated. Roast at 200°C (400°F) for 35–45 minutes until the pumpkin is tender and the vegetables are nicely browned at the edges.
2. Build the soup
Let the pumpkin cool slightly. If the skin is still tough, remove it – if it has softened during roasting, you can leave it on. Heat a little olive oil in a large pot and briefly sauté the grated ginger for about 30 seconds. Squeeze the roasted garlic cloves out of their skins and add all the roasted vegetables to the pot.
3. Blend
Pour in the hot vegetable broth and blend until completely smooth. Use a stick blender directly in the pot or transfer in batches to a standing blender. Be careful with hot liquid.
4. Finish
Add the coconut milk and stir well. If the soup is too thick, add more broth gradually until you reach your preferred consistency. Taste and adjust seasoning. Simmer over medium heat for a few minutes, stirring occasionally.
5. Serve
Ladle into bowls and top with pumpkin seeds, a drizzle of chili oil and a little extra coconut milk. Serve with grilled cheese on the side – I insist :).



STORING AND REHEATING
This creamy roasted pumpkin soup keeps in the fridge for up to 4 days and freezes beautifully for up to 3 months. Freeze before adding the coconut milk if you plan to freeze it – add it fresh when reheating for the best texture.
FAQ
Can I use butternut squash instead of pumpkin?
Yes, butternut squash is probably the easiest substitute and works beautifully. The flavor is slightly nuttier and less sweet than sugar pie pumpkin but the soup will be just as good. Use same method and timing.

Can I make this ahead of time?
Absolutely! This soup actually tastes better the next day as the flavours deepen overnight. Make it the day before, store in the fridge and reheat gently before serving.
