WHAT IS MANGO SALSA?

Mango salsa is a fresh, fruit-based salsa popular in Mexican-inspired cooking, where sweet and savory flavors are often combined. You’ll usually see it served with grilled meats or seafood.

I like to keep my version simple and balanced: sweet mango, a bit of heat from jalapeño, and enough lime to tie everything together. I tested it with and without garlic, and I think it adds a nice depth, but it’s completely optional if you want to keep it lighter.

This works so well because of contrast. The natural sugars in mango balance the acidity from lime juice and the sharpness of onion, while a bit of salt enhances all those flavors at once.

Letting the salsa sit for a few minutes also makes a difference. The salt draws out juices from the mango and onion, creating a light, naturally flavorful dressing.

HOW TO MAKE IT

Step 1: Prep the ingredients

Peel and dice the mango, finely chop the jalapeño and red onion, and cut the avocado into small cubes. Try to keep everything roughly the same size so the salsa feels balanced.

Step 2: Combine and season

Add the mango, jalapeño, red onion, and avocado to a bowl. Add the grated garlic (if using), lime zest, lime juice, and salt. Start with a small amount of lime juice and adjust later.

Step 2: Finish and let it rest

Fold in the chopped cilantro. Mix gently so the avocado keeps its shape. Let the salsa sit for about 5 minutes, then taste and adjust with more lime juice or salt if needed.

NOTES FROM MY KITCHEN

This is one of those things I make when I need something quick but still want it to feel a bit special. It works really well with simple grilled chicken, honey sriracha glazed salmon or even just spooned over rice.

If I’m making it for my family, I usually remove the jalapeño seeds to keep it mild. And if I don’t have cilantro, I just skip it – it still tastes really good.

Sometimes I also add a bit more lime than I think I need. It really brings everything together, especially if the mango is very sweet.

INGREDIENTS

  • 1 ripe mango, peeled and diced

  • 1 jalapeño, finely diced (remove seeds for less heat)

  • 1/4 small red onion, very finely diced

  • 1 avocado, diced

  • 1 small garlic clove, finely grated (optional)

  • Zest of 1 lime

  • Juice of 1 lime, to taste

  • Salt, to taste

  • 1-2 tbsp fresh cilantro, finely chopped

DIRECTIONS

  • Combine the base: Add the diced mango, jalapeño, red onion, and avocado to a bowl.
  • Season: Add grated garlic (if using), lime zest, lime juice, and salt.
  • Finish: Gently fold in the chopped cilantro, being careful not to mash the avocado.
  • Rest and taste: Let the salsa sit for 5 minutes, then taste and adjust lime juice or salt as needed.

Notes

  • Store in an airtight container in the fridge for up to 1 day. Because of the avocado, it’s best eaten fresh. It may soften and darken slightly over time.
